I think one of the keys is to look for what's in season and grown locally... you'll be shocked at the difference freshness makes. TJ's idea of sneaking 'em in smoothies is good, too. They take on a completely different flavor and texture that way. My favorites are carrots, garlic, cauliflower, red peppers, tomatoes, onions and sweet potatoes. I do the onion and cauliflower with garlic, salt, pepper, and a little bit of olive oil. Roast them at about 425 until they start to turn dark brown. Peppers and sweet potatoes don't even need the garlic, just a little oil and maybe some salt. Addictively good. Also consider tossing them with a little bit of balsamic vinegar.
