Help me Rhonda!

All the rest of ya too!

OK, here's the skinny. I freakin hate veggies. I know my body needs them, so I gag them down. I hate it. It ruins my meals knowing I have to choke down those damn nasty things that grow in the ground. I need ideas.

Here's some guidelines.

I don't like salad. It tastes like dirt. Lima beans should be stricken from the face of the earth. Okra is only OK if it's fried. I like corn and peas are OK. Ya, you know, the stuff they fatten pigs on!! I put onions in everything as it's a veg. I need to get the rainbow in.

The less I have to eat to count as a serving, the better. Last night I got the bright idea to take 1 cup of baby organic spinach and saute it in 1 teaspoon of olive oil (needed the oil or I'd have done it in water) and garlic. Reduced that nasty stuff down to about a tablespoon! Yay me! I had a lean cuisine lasagna (Yes I counted the tomato sauce as a veg too!) and just spread that over the top. Couldn't really taste it. Yay! A new idea. I figure if that never occurred to me over the last 50 years, there have to be other ways to disguise veggies out there too. I'm hoping all my blogging friends may have some ideas.

Things I do now:

I grate zucchini in my spaghetti sauce and other things as you just can't taste it.
Ya, that's about it!

You all know I've been struggling. A 5.8 pound gain this week and a 1.8 pound gain last week tells the tale. It's due to the stress of planning. I had just had enough. It's so hard to plan a meal you know you're not going to like. I do like my groceries!

I can eat veggie soup. I think I need to make a pot of that. Still, I can't eat veggie soup every day for lunch and dinner to get veg in. There have to be other ways.

Ideas?

  1. How about jumping on the green monster smoothy bandwagon?

    Here is the combo I make- but the possibilities are endless! AND you do not taste the GREEN in them! :)

    1 cup soy/almond/or regular milk
    1/2 frozen banana
    small handful of strawberries
    1 scoop protein powder
    1-2 cups fresh spinach :)

  2. Do you make pizza at all??? I always put fresh spinach and fresh tomaotes on my pizza. I also dice up broccoli, onions, red/yellow peppers and tomatoes and make an egg beater omlette.
    If you dice them up small enough, you can add them to just about anything and you'll never know. Good luck!!

  3. Here's an idea that I use sometimes, and my kids who hate veggies actually like these:

    How about roasting some vegetables until they start to caramelize? They take on a completely different flavor and texture that way. My favorites are carrots, garlic, cauliflower, red peppers, tomatoes, onions and sweet potatoes. I do the onion and cauliflower with garlic, salt, pepper, and a little bit of olive oil. Roast them at about 425 until they start to turn dark brown. Peppers and sweet potatoes don't even need the garlic, just a little oil and maybe some salt. Addictively good. Also consider tossing them with a little bit of balsamic vinegar. If you do potatoes this way, you can add a bit of honey for sweetness.

    Another idea is to puree your vegetables in a blender or a juicer, and add them to soups, casseroles, and even some baked goods, like quick breads.

    Of course, if all else fails, there is always the good old fashioned multi-vitamin!

  4. I had that same mind-set growing up, but gradually acquired a taste for the veggies and now there's few I don't consume in mass quantities. I think one of the keys is to look for what's in season and grown locally... you'll be shocked at the difference freshness makes. TJ's idea of sneaking 'em in smoothies is good, too. And if you don't want to saute the veggies, steaming will get the job done without the oil.

  5. I have no good recipes. I buy the bag of green beans in the produce dept. puncture bag with fork and nuke it in the microwave for a couple minutes and than sprinkle with Lawry Salt, spray a little imitation butter and add a few slivered almonds.

    That monster smoothie sounds interesting.

    Pizza with fresh sliced veggies tastes wonderful.. .I did not like veggies until I became and adult.. and I love them now... learn to make Zuchini bread ( WW has a recipe I am sure) make Zuchini Lasagna its wonderful and one of my favorites.. WW recipe add fresh onion Vidalia) add fresh baby bella mushrooms they come already sliced .. rinse them and add... add spinach too.. go to WW website and go to veggies look for recipes that include your vegetables~ u just might be surprised..

  7. I'm with Diane. Find another way to make them, find spices and herbs that will enhance the GOOD flavors of the veggies instead of the blah. You can do it Deb!

  8. I think you need to buy "Deceptively Delicious" by Jessica Seinfeld. She wrote it because her kids wouldn't eat veggies. The whole book is about how to disguise veggies in food.

  9. Ooh I like veggie soup, especially pumpkin and corn cuz they're sweet.
    What about veggie juice? Or veggie juice mixed with fruits? That way you can get the fiber and the nutrients all in one.
